Cut-Out Sugar Cookies: 25 Days of Christmas Cookies

I like this cut-out cookie recipe, because it is light, flaky, and tender. It’s not too sweet, so it lends itself well to decorating with colored sugar or icing.

Vanilla Sugar Cookies

Ingredients
  1. 1/2 cup room temperature vegan butter (like Earth Balance)
  2. 1/2 cup non-hydrogenated vegetable shortening
  3. 1 cup granulated sugar
  4. 6 tbsp vanilla non-dairy yogurt
  5. 2 tsp vanilla extract
  6. 3 1/4 cups white flour
  7. 1/2 tsp baking powder
  8. 1/2 tsp salt
  9. decorating sugar, sprinkles, or icing, as desired
Instructions
  1. 1. Cream the butter, shortening and sugar in a large bowl, using an electric mixer.
  2. 2. When light and fluffy, add the yogurt and vanilla. Beat to combine.
  3. 3. Mix in the dry ingredients and mix until a dough forms.
  4. 4. Wrap the dough in plastic wrap, and refrigerate the dough for at least an hour.
  5. 5. When ready to bake, preheat oven to 375 degrees.
  6. 6. Roll out half the dough on a lightly floured surface to 1/8 inch thickness. Cut into desired shapes. If decorating with sugar, sprinkle on at this time.
  7. 7. Bake on a parchment lined cookie sheet for 7-8 minutes or until very lightly browned. Allow the cookies to rest on the baking sheet for one minute, then transfer to a wire rack to cool completely. Store cooled cookies in an airtight container.
