Un-Tuna Salad

We’ve definitely entered into the part of the year when you want to have easy suppers, without having to turn on the stove and heat up the house. This recipe is perfect for a warm, summer night. It’s quick, cool, and light. If my girls shouts of, “more fofu,” are indication, it’s also incredibly delicious.

Un-Tuna Salad
  1. 1 block of firm or extra firm tofu (12-16 ounces)
  2. 1/2 cup minced dill pickles or 1/2 cup dill pickle relish
  3. 1/4 cup finely grated carrot
  4. 2 tbsp Vegenaise
  5. 2 tbsp vegan sour cream
  6. 2 tbsp Braggs liquid aminos or tamari
  7. 2 tbsp minced fresh chives or scallions
  8. 1 tbsp brown mustard
  9. 1 tbsp nutritional yeast
  10. salt and black pepper to taste
  1. 1. Drain and press the tofu.
  2. 2. While it’s draining, mix all the other ingredients together in a large bowl.
  3. 3. Crumble the drained tofu into the bowl and stir until the ingredients are well combined.
  4. 4. Serve on toasted bread or a crusty roll, with lettuce, avocado, tomato or other garnishes of your choice.

      The sandwich was really delicious. It’s rye bread with lots of caraway flavor. It was definitely worth the extensive teeth and braces cleaning that was required after I ate it.
