Last Minute Halloween Part 3: Pumpkin Sugar Cookies

Friends, it’s not too late to whip up some wonderful Halloween treats. You could make these sweet and salty pumpkin seeds or try the cookie recipe below. The dough comes together quickly. It’s a drop cookie, so their a snap to bake off. They’re soft, chewy sugar cookies, with pumpkin and light Fall spices that make them perfect for Halloween.  
Simple Pumpkin Sugar Cookies
1/2 cup vegan butter
1/2 cup non-hydrogenated vegetable shortening 
2 cups granulated sugar
3/4 cup pumpkin puree
1 tsp ground cinnamon
3/4 tsp kosher salt
1/2 tsp ground ginger
1/4 tsp ground cloves
1/2 tsp baking powder
1/2 tsp baking soda
3 cups white flour
Preheat oven to 350 degrees. In a large bowl, cream the butter, shortening, and sugar with an electric mixer, until light and fluffy, about 3 minutes. Add the pumpkin, cinnamon, salt, ginger, cloves, baking powder, and baking soda and beat another 2 minutes, until evenly combined. Mix in the flour and beat until the dough is fluffy. Scoop by rounded tablespoonful onto a greased or parchment lined cookie sheet, keeping the cookies about 1 1/2-2 inches apart. Bake 10-11 minutes, until golden brown and firm. Allow to cool on the cookie sheet for 2-3 minutes, then transfer to a wire rack to cool completely. Store cooled cookies in an airtight container. Yields about 60 cookies.
